Grandma Smucker’s Chicken Corn Soup
– Bird-in-Hand Restaurant
Ingredients for soup
- 1 (4 lb.) stewing chicken OR chicken breasts
- 1 onion, chopped
- 1 cup noodles, uncooked
- 3 qts. water
- 1 qt, corn, fresh, frozen or canned
- 2 tsp. salt
- 3/4 tsp. pepper
- 1/2 tsp. saffron
- 1 1/2 cups celery, diced
- Optional: hard-boiled eggs, chopped
Directions:
Cook chicken in large kettle in water with salt, pepper, and saffron until tender. Remove chicken and debone. Strain broth and bring to a boil. Add celery, onions, and noodles, and cook uncovered for 10 minutes. Add corn and cook for an additional 20 minutes. Add chicken and heat thoroughly. Garnish with parsley.
