Grandma Smucker’s Chicken Corn Soup

  • 1 (4 lb.) stewing chicken OR chicken breasts
  • 1 onion, chopped
  • 1 cup noodles, uncooked
  • 3 qts. water
  • 1 qt, corn, fresh, frozen or canned
  • 2 tsp. salt
  • 3/4 tsp. pepper
  • 1/2 tsp. saffron
  • 1 1/2 cups celery, diced
  • Optional: hard-boiled eggs, chopped

Directions:

Cook chicken in large kettle in water with salt, pepper, and saffron until tender.  Remove chicken and debone. Strain broth and bring to a boil. Add celery, onions, and noodles, and cook uncovered for 10 minutes. Add corn and cook for an additional 20 minutes. Add chicken and heat thoroughly. Garnish with parsley.
