“I had had a cold bean salad as a salad course while in Tuscany. It was delicious and I wanted to make a similar recipe but had no idea how to go about that once back in the US. After obsessing for a while, this is what I came up with. It’s easy to make, and changing up the vegetables seasonally keeps it from getting boring. Great if you have children – even young children can help pick out the vegetables they want in it. You can also leave out the vegetables if desired.”
